To make the whipped cream topping, use a hand mixer or electric mixer to whip together heavy cream and sugar until soft peaks form. Fold in vanilla extract then stir into chilled custard along with chocolate syrup. Refrigerate until needed.
To assemble: Place one layer of sponge cake on serving plate followed by a thin layer of eclair filling (about 1/3). Top with another layer of sponge cake followed by another thin layer of eclair filling (about 1/3) then place third sponge cake on top. Spread remaining éclair filling evenly over top and sides of cake then spread with whipped cream topping just before serving so it doesn’t melt too much!
