Introduction
I was looking for a good lemon pie recipe, and I found this one. It is amazing! The only thing I changed was the amount of butter, using half the amount of the original recipe. I do wish I had made a few more changes too though. This is so amazing that you should definitely try it!

The filling is made with eggs, sugar and lemon zest. The graham cracker crust was a little crumbly, but I think next time I will use a store-bought crust, which would probably be much sturdier.
I’m not much of a baker so this was kind of nerve wracking for me to make, but it turned out great. It’s sweet but not overly so and the tartness of the lemon balances nicely with all that sweetness from the pie filling.
The only thing I changed was the amount of butter, using half the amount of the original recipe.
I’ve taken some liberties with the original recipe and have made a few adjustments. Here are my suggestions:
- Use half the amount of butter
- Use half the amount of sugar
- Use half the amount of flour
- Use half the amount of eggs (I used 4 large eggs instead)
- And finally, use half the amount of lemon juice (I think I used about 1/2 cup).
I do wish I had made a few more changes too though.
- I would have used more lemon juice. The tartness of the pie was great, but I think it could have been even better.
- I would have increased the amount of sugar slightly. This pie is sweet, but not overly so—and I like my desserts on the sweeter side!
- I would have used a different crust recipe. The crust was delicious and crunchy, but didn’t exactly match up to what you’d get at a restaurant or bakery (or even in most grocery stores). It’s still really good though! And if you’re new to baking pies yourself, don’t be afraid to experiment with different variations until you find something that works best for your tastes/kitchen equipment/time constraints.
- Finally: next time around I’ll definitely make a bigger pie! My husband devoured half of this one by himself within 24 hours (our puppy helped out too). We both loved it so much that we’re already talking about making another batch soon…

- 1 prepared pie shell (I like Marie Callender’s lemon meringue)
- 2 cups of sugar
- 3/4 cup flour
- 1/2 cup butter (or margarine) cut into 1-inch pieces
