- When your mixture looks like melted caramel, remove from heat and let cool slightly before stirring in any flavors or toppings (see below).

- Use a heavy-bottomed pan. The heavier the pan, the less likely your caramel sauce will burn on the bottom
- Use a candy thermometer to gauge when your caramel is ready. If you don’t have one, the color of your cooked sugar should tell you that it’s time to take action. When the color starts to change from golden brown (which means “caramelized”) to dark amber, it means that you are getting close and should start stirring constantly.* Don’t use nonstick or glass pans when making caramels because they can get damaged by high heat which could lead to injury if there is any splattering.* Never add cold water or any other liquid when making caramelized sugar in order for it not turn into hard chunks of rock!
